Commodity 01 · Indonesia

Indonesian cocoa — beans and processed products for European industry.

We source cocoa in Indonesia and deliver into European manufacturing, against a specification agreed in writing before the goods are bought.

Origin

Sulawesi is the centre of gravity, and Indonesia already grinds what it grows.

Sulawesi accounts for roughly 65% of Indonesian cocoa output, with Central and Southeast Sulawesi the two largest producing provinces. Sumatra, Java and other islands make up the balance.

The commercially important point for a European buyer is downstream: in 2024, more than 87% of Indonesia’s cocoa export volume consisted of processed intermediates — butter, mass, liquor and powder — rather than raw beans. Indonesia is not only a bean origin; it is a grinding origin, which is why we can quote the full product range from one country.

Verified 10 August 2026 against Indonesia Investments and sector reporting. Production and export shares move year to year; we re-check them rather than leaving a number on the page indefinitely.
The product

One crop, five commercial products, five different conversations.

A cocoa bean and a deodorised cocoa butter are sold to different buyers, against different parameters, with different documentation. Treating them as one line item is where most sourcing conversations go wrong.

We quote each format on its own specification sheet, and we say which of them we can supply against your requirement before we discuss price.

  • Beans — moisture, bean count, fermentation, defects
  • Nibs — shell content, particle size, microbiology
  • Mass — fat content, fineness, free fatty acids
  • Butter — FFA, melting behaviour, colour and odour
  • Powder — fat, pH, colour, fineness
Product formats

Formats we handle.

Availability of each format depends on origin, season and contracted volume. Confirm the specific format you need in your enquiry.

Cocoa beans

Fermented and dried beans in jute or PP bags, contracted against moisture, bean count, defect count and fermentation criteria.

Cocoa nibs

Roasted or unroasted broken cocoa, de-shelled, for confectionery, bakery and ingredient applications.

Cocoa mass / liquor

Ground cocoa in block or liquid form, natural or alkalised, for chocolate and compound production.

Cocoa butter

Pressed cocoa fat, natural or deodorised, in cartons or blocks, contracted against free fatty acid and melting behaviour.

Cocoa powder

Natural and alkalised powders, specified by fat content, pH, colour and fineness.

Other derivatives

Additional cocoa derivatives can be sourced where a confirmed requirement and a qualified supply source exist.

Specification

The parameters we contract against.

The table lists the parameters that appear in our contracts. Target values are set per contract, against your specification — we do not publish generic values that would not bind anyone.

What this page does not claimThe products and origins above describe the cocoa Nevermore works in and the standard against which each shipment is contracted and documented. They are not a statement of certification held by Nevermore, of contracted volumes, or of exclusive supplier relationships. Where a certification applies to a shipment, the certificate is issued in the name of the certified party and passed to you with the documentation set — we do not present it as ours.
Compliance

Cocoa is in scope of the EU Deforestation Regulation.

Cocoa is one of the seven commodities covered by Regulation (EU) 2023/1115. Main obligations apply from 30 December 2026 for large operators and traders, and from 30 June 2027 for micro and small enterprises, following Regulation (EU) 2025/2650 (verified 10 August 2026).

For a European chocolate or ingredient manufacturer this means the commercial question is no longer only ‘what does the cocoa cost?’ but ‘what can my supplier evidence about where it was grown?’. We build supplier relationships against that second question from the first contract.
